Ingredients
 

For the Salad

  • 1 cup Mung Beans sprouted (about 1/2 cup dry mung beans)
  • 4 cup Lettuce chopped
  • 1 cup Tomatoes deseeded and chopped
  • 1/2 cup Onion red, thinly sliced
  • 2 Chilies deseeded (adjust to taste), finely chopped, green
  • 1 cup Grapes red muscat, halved and deseeded, red
  • 1 tbsp Oregano chopped, fresh
  • 1 tbsp Thyme chopped, fresh

Instructions
 

Prepare the Sprouts

  • Blanch the sprouted mung beans in boiling water for 3-4 minutes. Immediately rinse under cold water to stop the cooking process and refresh the beans.

Assemble the Salad

  • In a large bowl, combine the blanched mung beans, lettuce, tomatoes, red onion, green chilies, red grapes, oregano, and thyme.

Make the Dressing

  • In a small bowl, whisk together the lemon juice, pomegranate juice, chaat masala, and salt.

Combine and Serve

  • Just before serving, pour the dressing over the salad and gently toss to combine. Serve immediately chilled for the best flavor and texture.
