Ingredients
 

Yogurt Mixture

  • 500 gm Yogurt fresh, preferably made with skimmed/low-fat milk
  • 1/2 liter Water cold
  • 2 tsp Salt
  • 2 tsp Sugar
  • 1 tsp Pepper Powder or 1/2 tsp black pepper powder, white

Make the Herb Chutney

  • Combine the coriander, mint, curry leaves, ginger, and green chili in a blender. Add 1/4 cup of water. Blend until a smooth chutney forms. Set aside.

Prepare the Sambaram

  • In a large jug or bowl, whisk together the yogurt and cold water until completely smooth. This creates a creamy base for the drink.
  • Add the salt, sugar, pepper powder, and the prepared herb chutney to the yogurt mixture. Whisk thoroughly to ensure all ingredients are well combined and the flavors meld together.
  • Strain the mixture through a fine-mesh sieve or cheesecloth into another jug. This removes any fibrous bits from the chutney and creates a smooth, refined beverage.

Chill and Serve

  • Refrigerate the Sambaram for at least 2-3 hours, or preferably overnight, to allow the flavors to deepen and the drink to become thoroughly chilled.
  • Pour the chilled Sambaram into glasses filled with ice. Garnish with a sprig of mint or a few curry leaves for an elegant touch. Serve and enjoy!
