Ingredients
 

For the Barley Sattu

  • 1/2 cup Barley oo mugi barley, also known as sattu oo mugi; you can substitute with other barley varieties if needed.

For the Sharbat

  • 2 cup Water
  • 8 leaves Mint fresh leaves
  • 1 tbsp Coriander finely chopped
  • 1 tsp Mint dried leaves
  • 1 tsp Cumin jeera, roasted
  • 1 tsp Salt black, kala namak
  • 1.5 tsp Salt adjust to taste
  • 1-2 Chili adjust to taste, finely chopped, green
  • 1/2 tsp Pepper black
  • 2 tbsp Lemon Juice freshly squeezed
  • Ice cubes Ice for serving, optional

Instructions
 

Prepare the Barley Sattu

  • Dry roast the Oo Mugi barley in a pan over medium heat for 4-5 minutes, stirring continuously, until fragrant. Let it cool slightly, then grind into a fine powder using a blender or spice grinder.

Make the Sharbat

  • In a blender, combine the barley powder with 2 cups of water. Blend until smooth, ensuring no lumps remain. Add the remaining ingredients: fresh mint leaves, coriander, dried mint, roasted cumin, black salt, table salt, green chilies, black pepper, and lemon juice. Blend again until well combined.

Chill and Serve

  • Refrigerate the sharbat for at least 30 minutes to allow the flavors to meld and the drink to chill. Serve over ice, if desired.
