Instructions

  • In a large bowl, combine the barley flour, all-purpose flour, butter, baking powder, salt, powdered sugar, and milk. Mix until a smooth dough forms. Kneading for a few minutes helps develop gluten and creates a chewier cookie. Cover the dough and let it rest for 15 minutes. This allows the gluten to relax, resulting in more tender cookies.

  • While the dough rests, prepare the potato filling. Slice the par-boiled potato. In a bowl, combine the sliced potato with butter, garam masala, cinnamon, black pepper, and salt. Mix well.
  • Roll out the dough on a lightly floured surface. Cut the dough into small squares. Place a few potato slices in the center of each square.
  • Fold the dough over the potato filling to create a prawn-like shape. Pinch the edges to seal. Attach small pieces of vermicelli noodles to the curved side of the dough to resemble a prawn's tail.
  • Preheat oven to 180°C (350°F). Brush the shaped cookies with melted butter. This helps create a golden-brown crust.
  • Bake for 20 minutes, or until the cookies are golden brown and cooked through. Remove from the oven and let cool slightly before serving. These savory cookies are beautiful on their own and require no garnish.
