Ingredients
 

For the Mango Mash

  • 1 medium Mango and mashed, boiled until soft, raw, seeded, then peeled

For the Spice Blend

  • 1 tsp Cumin roasted, seeds
  • 1/2 tsp Fennel roasted, seeds

For the Panna

  • 2-4 tbsp Sugar adjust to your sweetness preference
  • 1/2 tsp Salt black, kala namak
  • 1/2 - 1 tsp Salt regular table salt; adjust to taste
  • 2 cup Water
  • Optional Ice for serving

Instructions
 

Prepare the Mango

  • Boil one medium raw mango until soft. Peel, remove the seed, and mash the mango flesh thoroughly.

Roast and Grind Spices

  • In a dry pan, roast the cumin seeds and fennel seeds until fragrant. Allow them to cool completely, then grind them into a fine powder using a spice grinder or mortar and pestle.

Make the Panna

  • In a mixing jar or blender, combine the mashed mango, roasted cumin powder, roasted fennel powder, black salt, regular salt (adjust to taste), and sugar. Add 2 cups of water and mix well until everything is thoroughly combined.

Serve

  • Pour the Mango Panna into serving glasses. Add ice if desired. Serve immediately and enjoy!
