Instructions

  • Lightly toast the oats and pumpkin seeds in a dry pan over low heat for 2-3 minutes until fragrant. This enhances their nutty flavor. Let them cool completely.
  • Once cooled, grind the toasted oats and pumpkin seeds into a fine powder using a blender or grinder.
  • In a blender, combine the diced mango, freshly squeezed orange juice, oat and pumpkin seed powder, milk, and half of the mint leaves. Blend until smooth and creamy.
  • Add sugar (if using) and check the consistency. If the smoothie is too thick, add a little more milk and blend again until desired consistency is reached.
  • Pour the smoothie into glasses or smoothie cups. For a fun presentation, use glass milk bottles with straws.
  • Chill the smoothies for at least 2 hours to allow the flavors to meld. Garnish with the remaining fresh mint leaves before serving.

I am a passionate foodie who loves to cook, serve and love to see people relishing my creations. Since the time I was small I used to wonder about the 'how' of things in the kitchen.

Then when I finally ventured as an unprofessional kitchen helper for my late grand-mother (a par excellent cook in her own generation) I was fascinated by the amount of stuff you could do to a simple milk and rice to form a most yummy pudding.

Here I am sharing my recipes with a will to learn from some and educate others as well!
