  • Combine agar agar powder, lychee juice, water, and sugar in a small saucepan. Whisk well to ensure no lumps.

Simmer and Dissolve

  • Bring the mixture to a boil over medium heat, stirring constantly. Reduce heat to low and simmer for 2 minutes, or until the agar agar is completely dissolved and the mixture is clear.

Add Flavoring and Cool Slightly

  • Remove from heat and stir in the rose essence. Let the mixture cool slightly, until it's just warm to the touch – but not set.

Add Fruit and Set

  • Gently fold in the fresh raspberries and lychee pieces. Pour the mixture into your chosen molds (ramekins, small glasses, etc.).
