  • Whisk together the self-raising flour, soda water, and salt in a bowl until a smooth batter forms.

Prepare the Lychees

  • If using fresh lychees, carefully remove the seeds.

Fry the Lychees

  • Heat the vegetable oil in a deep fryer or large pot to approximately 350°F (175°C). Test by dropping a small amount of batter into the oil; it should sizzle immediately.
  • Dip each lychee into the batter, ensuring it's fully coated. Fry in batches, ensuring not to overcrowd the pan, until golden brown and crispy. Remove with a slotted spoon and place on paper towels to drain excess oil.

Make the Caramel

  • In a heavy-bottomed saucepan, combine the sugar and water. Cook over medium heat, swirling the pan occasionally, until the sugar dissolves and the mixture turns into a clear syrup.
  • Increase the heat to medium-high. Without stirring, continue to cook until the syrup turns a light amber color. This is crucial for caramel color development. Be careful as it will caramelize quickly at this stage.
  • Immediately remove from heat and carefully pour into a bowl of ice water to halt the cooking process. This will prevent the caramel from burning and becoming too hard.

Assemble the Toffees

  • Using bamboo skewers or tongs, dip the fried lychees into the caramel, ensuring they are fully coated. Remove and place on a baking sheet lined with parchment paper.
  • Sprinkle generously with toasted sesame seeds.

Cool and Serve

  • Allow the toffees to cool completely before serving. They will harden as they cool.
