Ingredients
 

Chickpeas

  • 1 cup Chickpeas kabuli chana, or use 1 cup canned chickpeas, drained and rinsed., dried

Vegetables

  • 1 Onion finely chopped
  • 1 Tomato finely chopped
  • 1/2 cup Cucumber finely chopped
  • 1/2 cup Potato boiled and diced, optional
  • 1-2 Chili adjust to taste, finely chopped, green

Seasoning & Dressing

Garnish

  • 1 Lemon cut into wedges
  • 2 tbsp Coriander finely chopped, optional

Instructions
 

Prepare the Chickpeas

  • Wash and soak 1 cup of dried chickpeas overnight (at least 6-8 hours) or use canned chickpeas.
  • If using dried chickpeas, pressure cook with a little water and salt for 2 whistles, or until soft but not mushy. Alternatively, simmer in a covered pot until tender. Cool completely.

Assemble the Salad

  • In a large bowl, combine the cooked chickpeas, chopped onion, tomato, cucumber, potato (if using), green chilies, chaat masala, lemon juice, and salt.
  • Toss gently to combine all ingredients thoroughly.

Garnish and Serve

  • Garnish with lemon wedges and chopped coriander leaves (optional).
  • Let the salad sit for 10-15 minutes to allow the flavors to meld.
  • Serve chilled or at room temperature.
