Ingredients
For the Chutney
- 1 Papaya medium size (approximately 1 lb), raw
- 500 gm Sugar
- 1 tsp Salt or to taste
- 2 tbsp Raisins
- 8 Cashews roughly chopped
- 4 Peppercorns black
- 3 Cloves
- 1 tbsp Oil vegetable or canola oil
- 1 tbsp Lemon Juice freshly squeezed
Instructions
Prepare the Papaya
- Peel and grate the raw papaya. Remove the seeds.
Sauté the Spices
- Heat the oil in a pan over medium heat. Add the black peppercorns and cloves. Sauté until fragrant, about 30 seconds.
Cook the Chutney
- Add the grated papaya and sugar to the pan. Sauté for 5 minutes, stirring frequently.
- Reduce heat to low and simmer, stirring occasionally, until the chutney thickens significantly and becomes translucent, about 15-20 minutes.
Finish and Serve
- Stir in the salt and lemon juice. Remove from heat. Stir in the chopped cashews and raisins. Allow to cool completely before serving chilled.
