Ingredients
 

For the Chutney

  • 250 grams Papaya and thinly sliced, peeled, ripe, seeded
  • 150 grams Sugar
  • 1 tbsp Lemon Juice freshly squeezed
  • 1 tsp Ginger Juice freshly squeezed, or to taste
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Turmeric Powder for color and a hint of flavor, optional
  • 2 tbsp Water if needed for consistency

Instructions
 

Prepare the Papaya

  • Gently boil the thinly sliced papaya in a small amount of water for about 1-2 minutes until slightly softened but still firm. Drain well.

Cook the Chutney

  • In a saucepan, combine the boiled papaya, sugar, lemon juice, ginger juice, salt, and turmeric powder (if using). Cook over medium heat, stirring frequently, for about 5-7 minutes, or until the sugar dissolves and the chutney starts to thicken slightly. If the chutney is too thick, add a little water to adjust the consistency.

Finish and Serve

  • Remove from heat and let the chutney cool slightly. Taste and adjust seasoning as needed. Serve warm or cold as a delicious accompaniment to your favorite Bengali dishes.
