Instructions
- Heat 2 tablespoons of oil in a wok or large pan over medium-high heat. Add the cumin seeds and bay leaves. Let them sizzle for a few seconds until fragrant.
- Add the chopped garlic and ginger to the pan and sauté for about 30 seconds until softened and aromatic.
- Add the chopped tomatoes and red chili paste to the pan. Cook for 5-7 minutes, stirring occasionally, until the tomatoes soften and release their juices.
