Ingredients
Pasta & Vegetables
- 100 gm Penne Pasta
- 1/2 cup Spring Onions finely chopped
- 1/2 cup Bell Peppers finely chopped (any color)
- 1/2 cup Cauliflower Florets small florets
Sauce & Seasoning
- 2 tbsp Parmesan Cheese grated, plus extra for serving
- 1.5 tbsp Olive Oil
- 1 tsp Garlic Paste
- 1 tsp Pepper black, freshly ground, or to taste
- 1 tsp Basil dried
- 2 tbsp Sauce béchamel, or heavy cream for a richer sauce, white
- 1.5 tsp Salt or to taste
- 1 cup Water for boiling pasta
Instructions
Prepare the Pasta
- Boil 1 cup of water in a large pot. Add a pinch of salt and 1 teaspoon of olive oil to the boiling water. Add the penne pasta and cook according to package directions until al dente.
Sauté the Vegetables
- Heat 1.5 tablespoons of olive oil in a large frying pan over medium heat. Add the garlic paste and sauté for about 30 seconds until fragrant. Add the chopped capsicum, spring onions, and cauliflower florets. Sauté for 5-7 minutes, until the vegetables are tender-crisp.
Combine and Finish
- Add the cooked penne pasta to the pan with the vegetables. Stir in the grated Parmesan cheese, white sauce (or heavy cream), black pepper, and salt. Mix well to combine, ensuring the pasta is evenly coated in the creamy sauce.
Serve
