Instructions

Prepare the Pasta

  • Boil 1 cup of water in a large pot. Add a pinch of salt and 1 teaspoon of olive oil to the boiling water. Add the penne pasta and cook according to package directions until al dente.

Sauté the Vegetables

  • Heat 1.5 tablespoons of olive oil in a large frying pan over medium heat. Add the garlic paste and sauté for about 30 seconds until fragrant. Add the chopped capsicum, spring onions, and cauliflower florets. Sauté for 5-7 minutes, until the vegetables are tender-crisp.

Combine and Finish

  • Add the cooked penne pasta to the pan with the vegetables. Stir in the grated Parmesan cheese, white sauce (or heavy cream), black pepper, and salt. Mix well to combine, ensuring the pasta is evenly coated in the creamy sauce.

Serve

  • Sprinkle with dried basil and extra Parmesan cheese. Serve immediately and enjoy!

Recipe Notes

Expert Tips

  • For a richer flavor, use fresh garlic instead of garlic paste.
  • Add a pinch of red pepper flakes for a touch of heat.
  • Experiment with other vegetables – broccoli, zucchini, or spinach would also work well.
  • If your sauce is too thick, add a splash of pasta water to thin it out.
