  • Mix the semolina and yogurt in a bowl. Let it rest for 15 minutes to ferment.
  • Add salt and baking powder (Eno) to the semolina mixture. Mix well until a smooth batter forms, similar in consistency to idli batter. Add a little water if needed to achieve the desired consistency.

Prepare the Vegetables

  • In a separate bowl, combine the chopped spring onions and broccoli.

Assemble and Bake

  • Lightly grease small muffin cups with vegetable oil.
  • Divide the vegetable mixture evenly among the muffin cups.
  • Top each cup with the semolina batter and sprinkle with black sesame seeds.
  • Preheat your air fryer to 180°C (350°F).
  • Place the muffin cups in the preheated air fryer and cook for 6 minutes, or until golden brown and cooked through.

Cool and Serve

  • Remove the muffins from the air fryer and let them cool slightly in the cups before removing them.
