- 1 cup Semolina also known as suji
- 1.5 tsp Salt adjust to taste
- 1 tsp Sesame Seeds black
Wet Ingredients
- 1 cup Yogurt also known as curd
- 1 packet Baking Powder eno fruit salt or similar brand
Vegetables
- 1/2 cup Spring Onions chopped, finely
- 3/4 cup Broccoli chopped, finely
- 1 tbsp Vegetable Oil for greasing muffin cups
Instructions
Prepare the Semolina Batter
- Mix the semolina and yogurt in a bowl. Let it rest for 15 minutes to ferment.
- Add salt and baking powder (Eno) to the semolina mixture. Mix well until a smooth batter forms, similar in consistency to idli batter. Add a little water if needed to achieve the desired consistency.
Prepare the Vegetables
- In a separate bowl, combine the chopped spring onions and broccoli.
Assemble and Bake
- Lightly grease small muffin cups with vegetable oil.
- Divide the vegetable mixture evenly among the muffin cups.
- Top each cup with the semolina batter and sprinkle with black sesame seeds.
- Preheat your air fryer to 180°C (350°F).
- Place the muffin cups in the preheated air fryer and cook for 6 minutes, or until golden brown and cooked through.
Cool and Serve
