Instructions

Prepare the Tempering

  • Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Once they splutter, add dried red chilies and curry leaves. Sauté for a few seconds until fragrant.

Sauté the Onions

  • Add the chopped onions to the pan and sauté for 2-3 minutes until softened but not browned. Stir in turmeric powder and red chili powder (if using).

Combine and Simmer

  • In a bowl, whisk the yogurt until smooth. Add the sautéed onions to the yogurt and mix well. Add salt and water, mixing until the desired consistency is reached. Gently heat on low, stirring frequently to prevent curdling. Do not boil.

Serve

  • Serve hot with roti, rice, or naan. Garnish with fresh cilantro if desired.

Recipe Notes

Expert Tips for the Perfect Kadhi

  • Whisk the yogurt well: This prevents curdling and ensures a smooth, creamy texture.
  • Don't overcook the onions: Slightly softened onions provide the best flavor and texture.
  • Low and slow: Simmering the kadhi gently prevents the yogurt from curdling. Stir frequently!
  • Adjust spices: Feel free to adjust the amount of red chilies to your preferred level of spiciness.
