Ingredients
For the Tempering
- 2 tbsp Vegetable Oil
- 1/2 tsp Mustard Seeds rai
- 1/2 tsp Cumin Seeds
- 2-3 Chilies adjust to your spice preference, dried, red
- 10 leaves Curry Leaves
For the Kadhi
- 2 medium Onion finely chopped
- 1/2 tsp Turmeric Powder haldi
- 1/4 tsp Chili Powder for extra heat, optional, red
- 400 gm Yogurt or curd; use full-fat for best results
- 1-1.5 tsp Salt or to taste
- 1/2 cup Water or as needed for desired consistency
Instructions
Prepare the Tempering
- Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Once they splutter, add dried red chilies and curry leaves. Sauté for a few seconds until fragrant.
Sauté the Onions
- Add the chopped onions to the pan and sauté for 2-3 minutes until softened but not browned. Stir in turmeric powder and red chili powder (if using).
Combine and Simmer
- In a bowl, whisk the yogurt until smooth. Add the sautéed onions to the yogurt and mix well. Add salt and water, mixing until the desired consistency is reached. Gently heat on low, stirring frequently to prevent curdling. Do not boil.
Serve
- Serve hot with roti, rice, or naan. Garnish with fresh cilantro if desired.
