Ingredients
For the Pakoras
- 0.5 cup Gram Flour chickpea flour
- 0.5 tsp Salt
- 0.5 tsp Chili Powder red
- 0.25 tsp Asafoetida hing
- 0.5 cup Water or as needed
- 2 tbsp Oil for shallow frying
For the Kadhi
- 0.5 cup Gram Flour chickpea flour
- 1 cup Buttermilk
- 1 tsp Salt or to taste
- 1 tsp Coriander dhania, ground
- 0.25 tsp Turmeric Powder haldi
- 0.5 tsp Fenugreek Seeds methi dana
- 2 cup Water or as needed
For the Tempering
- 2 tbsp Clarified Butter
- 0.25 tsp Asafoetida hing
- 2 Chillies broken, dried, red
- 1 tsp Cumin Seeds jeera
- 8-10 Curry Leaves
- 0.25 tsp Chili Powder red
Instructions
- In a bowl, combine the besan, salt, red chili powder, and asafoetida. Gradually whisk in water until a smooth, thick batter forms. The batter should be thick enough to coat the back of a spoon. Heat oil in a large skillet over medium heat.
- Drop spoonfuls of the batter into the hot oil, ensuring not to overcrowd the pan. Shallow fry the pakoras for 2-3 minutes per side, or until golden brown and crispy. Remove the pakoras from the skillet and place them on a paper towel-lined plate to drain excess oil. Set aside.
- In a blender or mixing bowl, combine the remaining besan, sour curd (or buttermilk), salt, ground coriander, turmeric powder, and water. Blend until smooth and there are no lumps. Adding the curd to the blender helps create a smooth, lump-free kadhi base.
- Pour the kadhi mixture into a heavy-bottomed pot or saucepan. Add the fenugreek seeds. Cook over medium heat, stirring continuously to prevent sticking and burning. Bring the kadhi to a gentle simmer.
- Reduce the heat to low and continue to simmer the kadhi for 20-25 minutes, stirring occasionally. Simmering the kadhi allows the flavors to meld and the besan to cook thoroughly, resulting in a creamy texture.
- While the kadhi simmers, prepare the tempering. Heat ghee or oil in a small pan over medium heat. Add the asafoetida, broken red chilies, cumin seeds, and curry leaves. Sauté for a few seconds until fragrant.
- Add the red chili powder to the tempering and stir for a few seconds. Immediately pour the tempering over the simmering kadhi. Gently stir to combine. Add the prepared pakoras to the kadhi. Serve hot with steamed rice.
