Ingredients
For the Pakoras
- 1 cup Gram Flour besan, large sized
- 1 tsp Salt or to taste
- 1/2 tsp Chili Powder red
- 1/2 cup Water or as needed to make a thick batter
- 2 cup Oil mustard oil for frying
For the Kadhi
- 250 gm Yogurt full fat, sour, strained, yogurt
- 2 tbsp Gram Flour besan, for the kadhi
- 1 1/2 cup Water as required, to adjust consistency
- 1.5 tsp Salt or to taste
- 2 tsp Chili Powder or to taste, red
- 1 tbsp Turmeric Powder haldi
- 1 tbsp Fenugreek Seeds methi dana
- 2 tbsp Garlic finely chopped
- 2 tbsp Mustard Oil
- 1 tbsp Clarified Butter for tempering
- 4 Chilies dried, red
Garnishing
- 1 tbsp Coriander chopped
Instructions
Prepare the Pakoras
- Whisk together gram flour, salt, red chili powder, and water until a smooth, thick batter forms.
- Heat oil in a pan. Drop spoonfuls of the pakora batter into the hot oil and fry until golden brown and crispy, flipping halfway.
- Remove the pakoras and drain on paper towels.
Prepare the Kadhi
- In a pan, heat mustard oil. Add fenugreek seeds and sauté until fragrant.
- Add finely chopped garlic and sauté for a minute until lightly golden.
- Stir in turmeric powder and red chili powder, cook for 30 seconds.
- Add salt, gram flour, and whisk in the yogurt ensuring no lumps form. Gradually add water to adjust consistency.
- Bring the mixture to a boil, stirring continuously to prevent sticking.
- Reduce heat and simmer for 10-12 minutes, or until the gravy slightly thickens.
- Add the fried pakoras, simmer for another 2 minutes.
Tempering and Serving
- Heat ghee in a small pan. Add dried red chilies and sauté until they turn dark red.
- Pour this tempering (tadka) over the kadhi.
- Garnish with fresh coriander leaves. Serve hot with steamed rice or roti.
