Instructions

Prepare the Custard

  • Combine eggs and 40g of sugar in a medium bowl. Whisk until well combined and the sugar is mostly dissolved. Slowly whisk in the warmed milk until the mixture is smooth. Strain the mixture through a fine-mesh sieve into a microwave-safe bowl or ramekin. Cover with plastic wrap, leaving a small vent for steam to escape.

Microwave the Custard

  • Microwave on high (600 watts) for 90 seconds. Remove and gently stir. Microwave for another 30-60 seconds, or until the custard is just set but still slightly jiggly in the center. Do not overcook!

Make the Caramel Sauce

  • In a small saucepan over medium-low heat, combine 50g of sugar and 2 tbsp of water. Do not stir. Cook, swirling the pan occasionally, until the sugar melts and turns a rich amber color. Carefully add 1 tbsp of hot water (be cautious as it will bubble vigorously) and stir to combine. Let cool slightly.

Assemble and Serve

  • Once the custard is cool, chill in the refrigerator for at least 30 minutes. Invert the chilled custard onto a plate. Drizzle with the caramel sauce. Garnish with whipped cream and fresh berries, if desired.

Recipe Notes

Expert Tips for Perfect Egg Custard

  • Use fresh, high-quality eggs for the best flavor and texture.
  • Warming the milk slightly helps prevent the eggs from curdling.
  • Don't overcook the custard in the microwave; it should be set but still slightly soft in the center.
  • For a richer caramel, add a pinch of salt to the caramel sauce.
