Ingredients
For the Custard
- 2 Large Eggs
- 250 ml Milk whole milk recommended; warmed gently (about 30 seconds in the microwave)
- 40 gm Sugar granulated
Instructions
Prepare the Custard
- Combine eggs and 40g of sugar in a medium bowl. Whisk until well combined and the sugar is mostly dissolved. Slowly whisk in the warmed milk until the mixture is smooth. Strain the mixture through a fine-mesh sieve into a microwave-safe bowl or ramekin. Cover with plastic wrap, leaving a small vent for steam to escape.
Microwave the Custard
- Microwave on high (600 watts) for 90 seconds. Remove and gently stir. Microwave for another 30-60 seconds, or until the custard is just set but still slightly jiggly in the center. Do not overcook!
Make the Caramel Sauce
- In a small saucepan over medium-low heat, combine 50g of sugar and 2 tbsp of water. Do not stir. Cook, swirling the pan occasionally, until the sugar melts and turns a rich amber color. Carefully add 1 tbsp of hot water (be cautious as it will bubble vigorously) and stir to combine. Let cool slightly.
Assemble and Serve
- Once the custard is cool, chill in the refrigerator for at least 30 minutes. Invert the chilled custard onto a plate. Drizzle with the caramel sauce. Garnish with whipped cream and fresh berries, if desired.
