Prepare the Pineapple
- Preheat your grill to medium-high heat. Lightly brush the grill grates with olive oil.
- Whisk together the brown sugar, cinnamon, and melted butter in a bowl.
- Cut the pineapple into rings or wedges (about 8 slices) and place them in a large resealable bag. Pour the brown sugar mixture over the pineapple and shake until evenly coated.

Expert Tips
- For extra flavor, add a pinch of nutmeg or allspice to the brown sugar mixture.
- If you don't have a grill, you can broil the pineapple slices in the oven. Keep a close eye on them to prevent burning.
- To make the caramel sauce extra smooth, strain it through a fine-mesh sieve before drizzling over the pineapple.
- Leftover grilled pineapple can be stored in the refrigerator for up to 2 days. The caramel sauce should be stored separately and reheated gently before serving.
