- 1 teaspoon baking powder
- 1 1/2 teaspoons pumpkin pie spice pumpkin pie spice
- 1/2 teaspoon cinnamon ground
- 1/2 teaspoon sea salt
- 1 1/2 cups almond milk unsweetened
- 1 cup pumpkin puree canned
- 1/4 cup maple syrup pure, plus more for serving
- 1 tablespoon flaxseed ground
- 1 tablespoon coconut oil melted
- 1 teaspoon vanilla extract
- 1/2 cup pecan or walnuts, chopped and divided

Instructions
- Preheat the oven to 375°F and lightly coat an 8-inch square baking dish with cooking spray.
- In a large mixing bowl, stir together the rolled oats, baking powder, pumpkin pie spice, cinnamon, and sea salt.
- Add the almond milk, pumpkin puree, maple syrup, ground flaxseed, melted coconut oil, and vanilla extract.
- Mix well until the oats are evenly coated and the mixture is fully combined.
- Stir in part of the chopped pecans or walnuts, reserving the remaining nuts for the top.
- Transfer the oatmeal mixture to the prepared baking dish and spread it into an even layer.
- Sprinkle the remaining chopped nuts evenly over the top.
- Bake for 30 to 35 minutes, until the center is set and the top is lightly golden.
- Allow the baked oatmeal to rest for 5 to 10 minutes before slicing or scooping.
- Serve warm with additional maple syrup, yogurt, or honey if desired.
