Ingredients
For the Dough
- 1 cup Whole Wheat Flour atta, whole
- 2 tbsp Caster Sugar
- 1/2 cup Butter chilled, cubed, unsalted
- 1/2 - 3/4 cup Water ice water, add gradually as needed
For the Filling
- 200 gm Cottage Cheese indian cottage cheese, crumbled
- 2 slices Pineapple sweetened, tinned, very finely chopped
- 1/4 tbsp Cardamom Powder ground cardamom
- 3 drops Pineapple Essence optional
- 2 tbsp Sugar granulated sugar, adjust to taste
Instructions
Make the Dough
- In a large bowl, whisk together the whole wheat flour and caster sugar. Cut in the chilled butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs. Gradually add ice water, mixing until a soft dough forms. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Prepare the Filling
- In a separate bowl, combine the crumbled paneer, finely chopped pineapple, cardamom powder, pineapple essence (if using), and sugar. Mix well to combine.
Assemble the Gujiya
- Divide the chilled dough into 10 equal portions. Roll each portion into a 4-5 inch circle using a rolling pin. Brush the edges of each circle with a little water.
Fill and Seal
- Place a spoonful of the paneer and pineapple filling in the center of each circle. Fold the dough in half to form a semicircle, pressing the edges firmly to seal. Crimp the edges decoratively with a fork or your fingers.
Bake the Gujiya
- Preheat your oven to 180°C (350°F). Place the assembled gujiyas on a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until golden brown. Keep an eye on them to prevent burning.
Serve
- Let the gujiyas cool slightly before serving. Enjoy them warm with chilled thandai, ice cream, kheer, or custard.
