Ingredients
- 1 cup Semolina suji, or rava rava
- 1 / Vegetables beans - cup boiled, carrots, peas
- 2 cup Water
- 1.5 tsp Salt or as per taste
- 1 / Onion chopped- cup
- 1 / Bell Peppers chopped- cup
- 1/2 tsp Chili Powder red
- 1 tsp Chilli chopped- 1 tsp, green
- 1 tsp Garam Masala
- 1 tsp Mustard Seeds rai
- 1 leaf Curry Leaves
- 1 leaf Basil
- 10 Walnuts pinenuts
- 2 tbsp Garlic
- 1/4 cup Olive Oil
- 1/4 cup Parmesan Cheese
Instructions
Prepare the Pesto
- Combine basil, pine nuts, parmesan cheese, garlic, olive oil, and salt in a food processor or blender. Blend until a smooth paste forms.
Cook the Upma
- Heat oil in a pan or pot over medium heat. Add mustard seeds and let them splutter. Add curry leaves and sauté for a few seconds.
- Add finely chopped onions and bell peppers; sauté until softened.
- Stir in semolina and cook, stirring constantly, until lightly browned.
- Gradually add water, stirring continuously to prevent lumps. Add salt, red chili powder, and garam masala. Continue to stir until the mixture thickens and pulls away from the sides of the pan.
- Stir in the pre-boiled vegetables.
- Stir in the prepared pesto sauce and cook for another 4-5 minutes, allowing the flavors to meld.
Serve
- Serve hot. Garnish with extra basil leaves (optional). Serve with a side of your favorite chutney or sauce (optional).
