- 2 tbsp Clarified Butter or vegetable oil
- 1 medium Onion thinly sliced
- 3 Cloves
- 2 Chilies finely chopped, green, or adjust to your spice preference

Instructions
Prepare the Dal
- Soak 1 cup of yellow moong dal in water for at least 1 hour.
- In a pot, combine the soaked dal with 2 cups of water, 1/2 tsp turmeric powder, and salt to taste.
- Bring to a boil, then reduce heat and simmer until the dal is tender but not mushy, about 15-20 minutes. Drain any excess water.
Temper the Spices
- Heat ghee in a pan over medium heat. Add cloves and cumin seeds; sauté until fragrant.
- Add the thinly sliced onions and sauté until golden brown.
- Stir in the green chilies and sauté for another minute.
- Add red chili powder and coriander powder (if using), sauté for 30 seconds until fragrant, being careful not to burn the spices.
Combine and Serve
- Add the cooked moong dal to the pan with the tempered spices. Mix well to combine.
- Simmer for another 2-3 minutes to allow the flavors to meld.
- Serve hot with chapatis or rice.
