  • Heat 2 tbsp oil in a pan. Add the chopped carrots, bell pepper, and cabbage. Sauté for 1-2 minutes until slightly softened but still crunchy. Stir in turmeric powder, black pepper (if using), and salt. Cook for another minute. Remove from heat and stir in the grated cheese.

Assemble and Cook the Potlis

  • Heat remaining oil in a separate pan. Pour 2 tbsp of the moong dal batter onto the hot pan and spread into a thin circle (like a small pancake). Drizzle with a little oil. Once lightly browned on one side, flip and cook the other side. Spoon a portion of the vegetable filling onto the cooked batter, fold over to create a pouch, and tie securely with a green garlic stalk.
