Ingredients
 

For the Peanuts

For the Jaggery Syrup

  • 1 cup Jaggery
  • 1 tbsp Ghee desi ghee preferred, but regular ghee works as well

Optional Additions

  • 1/2 tsp Fennel Seeds optional, adds a pleasant aroma and flavor
  • 1 tbsp Coconut optional, for garnish, grated
  • 1 tbsp Water to help melt the jaggery

Instructions
 

Prepare the Peanuts

  • Dry roast the peanuts in a heavy-bottomed pan or kadai over medium heat for 5-7 minutes, or until fragrant and lightly browned. Let cool completely.

Remove Peanut Skins

  • Once cool, rub the peanuts together to remove the skins. You can also use a clean kitchen towel to help with this process. Break the peanuts into smaller pieces if desired.

Make the Jaggery Syrup

  • In the same pan, add the jaggery and 1 tablespoon of water. Cook over medium heat, stirring constantly to prevent burning. Continue to stir until the jaggery is completely melted and forms a smooth syrup.

Test for Doneness

  • To check if the jaggery is cooked, drop a small amount into a glass of cold water. It should form a brittle, easily breakable ball or toffee. If it's still sticky, continue cooking, stirring constantly.

Combine Ingredients

  • Remove the pan from heat. Add the roasted peanuts, fennel seeds (if using), and ghee. Stir well to combine everything thoroughly.

Shape the Chikki

  • Grease a flat plate or tray lightly with oil or ghee. Pour the mixture onto the prepared surface and spread it evenly into a thin layer using a spatula or greased knife.

Garnish and Cool

  • Sprinkle the grated coconut (if using) over the top. Gently score the chikki into desired shapes or pieces while it is still warm. Let it cool completely before breaking it into pieces.

Store and Enjoy

  • Once completely cool, break the chikki into pieces and store in an airtight container in a cool, dry place.
