For the Chikki

  • 1 cup Peanuts chopped, roasted and shelled
  • 1 cup Sugar granulated
  • 1/2 cup Fruits chopped apricots; roasted and chopped (optional), cranberries, dried, mixed, such as raisins
  • 1 tsp Cardamom Powder for best flavor, freshly ground
  • 2 tbsp Ghee for greasing, or vegetable oil
  • 1 tbsp Water for assisting caramelization

Prepare the Peanuts

  • Roast peanuts until fragrant and lightly browned. Let them cool completely, then remove skins and chop roughly.

Caramelize the Sugar

  • In a heavy-bottomed pan, combine sugar and water over medium heat. Stir gently until sugar dissolves. Do not stir continuously; allow sugar to caramelize naturally.

Combine Ingredients

  • Once the sugar turns a light golden brown, remove from heat immediately. Stir in cardamom powder and ghee. Add the peanuts and dried fruits (if using), mixing quickly and thoroughly.

Shape the Chikki

  • Lightly grease a flat surface or baking sheet with ghee or oil. Pour the mixture onto the prepared surface and quickly spread it into a thin, even layer. Use a spatula to shape it evenly and to avoid uneven thickness.

Cool and Cut

  • Let the chikki cool completely until firm. Once cool, score diamond shapes into it using a sharp knife. Break along the scored lines to create individual pieces.
