Preparing the Filling

  • Heat oil in a pan on medium heat. Add onion if using and saute until soft. Add capsicum and cook for 2 minutes.
  • Add paneer, turmeric powder, red chilli powder, chaat masala and salt, and toss gently for 2 to 3 minutes until the paneer is lightly coated and warmed through.

Assembling the Frankie

  • Place the roti or paratha on a flat surface. Spoon the filling along the centre and roll tightly into a Frankie-style wrap, folding in one end to prevent the filling from falling out.

Packing

  • Wrap tightly in parchment paper or foil to hold its shape, and pack with cucumber slices and grapes on the side.

Tiffin Pairing

Cucumber and grapes add crunch and natural sweetness alongside the flavourful paneer filling.

Make-Ahead Tip

This recipe assumes a plain roti or paratha is already made or left over from a previous meal, which makes it quick to put together when you have one on hand.

Quick Swap

Use grated mild cheese instead of paneer, or swap capsicum and onion for any vegetables you already have available.
