Recipe Notes

Tiffin Pairing

Apple or orange adds a refreshing, sweet contrast to the savoury corn and paneer filling.

Make-Ahead Tip

Boil the corn and crumble the paneer the night before, then mix and refrigerate the filling in a covered container.

Quick Swap

Use grated mild cheese instead of paneer, or frozen corn, thawed, instead of fresh if that's easier to keep on hand.

Allergen Note

Contains dairy (paneer, butter) and wheat/gluten (bread).

Packing Tip

Wrap the sandwich in parchment paper to help it stay fresh and prevent it from turning soggy from the corn's moisture.
