- 1/2 tsp Turmeric haldi
- 1 tbsp Coriander dhania
- 1 tsp Cumin jeera, roasted and ground
- 1 tbsp Mango Powder amchur, dry
- 1 tbsp Ginger paste
- 1 tsp Garam Masala
Instructions
Prepare the Filling
- Combine gram flour, salt, green chili paste, red chili powder, turmeric powder, coriander powder, cumin powder, dry mango powder, ginger paste, and garam masala in a bowl. Gradually add water while mixing to create a thick, smooth batter.
Assemble the Patrode
- Clean and thoroughly dry the spinach leaves. Spread a spoonful of the prepared batter onto each leaf. Roll each leaf tightly into a small cylindrical shape. Repeat with remaining leaves.
Steam the Patrode
- Steam the rolled spinach bundles in a steamer basket for about 10-12 minutes, or until the spinach is tender and the batter is cooked through.

Recipe Notes
Expert Tips for Perfect Palak Patrode
- For extra flavor, add a pinch of asafoetida (hing) to the batter.
- If you prefer less spicy patrode, reduce the amount of green chilies and red chili powder.
- Ensure the spinach leaves are completely dry before applying the batter to prevent sticking and ensure a crisp finish.
- Don't overcrowd the pan while frying, to ensure even browning and crisping of the Patrode.
