Ingredients
For the Patrode Batter
- 1/2 cup Gram Flour besan
- 1 tsp Salt or to taste
- 1 tbsp Chili Paste green
- 1 tbsp Chili Powder red
- 1/2 tsp Turmeric Powder
- 1 tbsp Coriander Powder
- 1 tsp Cumin Powder roasted
- 1 tbsp Mango Powder dry mango powder
- 1 tbsp Ginger Paste
- 1 tsp Garam Masala
Instructions
Prepare the Batter
- Mix chickpea flour, salt, green chili paste, red chili powder, turmeric powder, coriander powder, cumin powder, amchur, ginger paste, and garam masala in a bowl. Add water gradually, mixing until a smooth, thick batter forms. The consistency should be similar to pancake batter.
Prepare the Spinach Leaves
- Wash spinach leaves thoroughly and pat them dry. Remove any thick stems.
Assemble and Steam the Patrode
- Spread a thin layer of batter onto each spinach leaf. Stack 3-4 leaves together, creating a roll. Repeat with remaining leaves and batter. Steam the rolls in a steamer for 15-20 minutes, or until the batter is cooked through.
Fry the Patrode
- Let the steamed patrode cool slightly. Slice the rolls into 1-inch thick rounds. Heat oil in a pan over medium heat. Fry the patrode rounds until golden brown and crispy on both sides.
