  • Mix chickpea flour, salt, green chili paste, red chili powder, turmeric powder, coriander powder, cumin powder, amchur, ginger paste, and garam masala in a bowl. Add water gradually, mixing until a smooth, thick batter forms. The consistency should be similar to pancake batter.

Prepare the Spinach Leaves

  • Wash spinach leaves thoroughly and pat them dry. Remove any thick stems.

Assemble and Steam the Patrode

  • Spread a thin layer of batter onto each spinach leaf. Stack 3-4 leaves together, creating a roll. Repeat with remaining leaves and batter. Steam the rolls in a steamer for 15-20 minutes, or until the batter is cooked through.

Fry the Patrode

  • Let the steamed patrode cool slightly. Slice the rolls into 1-inch thick rounds. Heat oil in a pan over medium heat. Fry the patrode rounds until golden brown and crispy on both sides.
