Ingredients
 

For the Spinach Puree:

  • 2 cup Spinach fresh spinach leaves, thoroughly washed

For the Dhokla Batter:

Prepare the Spinach Puree

  • Blanch 2 cups of washed spinach leaves until wilted. Puree until smooth. Set aside.

Prepare the Dhokla Batter

  • Grind the soaked split pigeon peas with yogurt into a smooth batter.

Combine Ingredients

  • In a large bowl, combine the lentil batter, spinach puree, ginger-green chili paste, salt, sugar, oil, and lemon juice. Mix thoroughly.

Add Eno and Steam

  • Just before steaming, add the Eno fruit salt and gently mix. Immediately pour the batter into a greased dhokla plate or pan.
  • Steam for 15-20 minutes, or until a toothpick inserted comes out clean.

Prepare the Tempering

  • While the dhokla is steaming, heat oil in a small pan. Add mustard seeds and let them splutter. Add sesame seeds and saute briefly.
  • Remove from heat and add 2 tablespoons of water to the tempering.

Garnish and Serve

  • Once the dhokla has cooled slightly, pour the tempering evenly over it. Garnish with chopped coriander and grated coconut.
  • Cut into squares and serve warm. Enjoy your delicious Palak Dhokla!
