Ingredients
 

Meat and Greens

  • 750 gm Mutton cut into 2-inch pieces; goat meat is traditional
  • 500 gm Spinach fresh, washed and roughly chopped

Spices and Aromatics

Garnish and Other

  • 2 tbsp Coriander dhania, chopped, for garnish
  • 1/4 cup Oil vegetable or any neutral oil
  • 1 cup Water for pressure cooking

Instructions
 

Prepare the Spice Paste

  • Grind together the onions, tomatoes, ginger-garlic paste, and green chilies into a smooth paste using a blender or food processor.

Sauté the Paste

  • Heat oil in a pressure cooker over medium heat. Add the spice paste and cook for 10 minutes, stirring occasionally, until the oil begins to separate.

Add Spices and Cook

  • Add the red chili powder, coriander powder, garam masala, turmeric powder, meat masala, and salt. Mix well and cook for another 5 minutes, stirring continuously, to allow the spices to bloom.

Pressure Cook the Mutton

  • Add 1 cup of water and the mutton pieces to the pressure cooker. Stir to combine. Secure the lid and pressure cook for 5 whistles (or according to your pressure cooker's instructions). Turn off the heat and allow the pressure to release naturally.

Add Spinach and Finish

  • Open the pressure cooker carefully. Add the chopped spinach and coriander leaves. Stir gently. Close the lid and pressure cook for 3 more whistles. Turn off the heat and let the steam release naturally.

Serve

  • Once the pressure has completely released, carefully open the pressure cooker. Stir gently. Your Palak Gosht is ready! Serve hot with roti, naan, rice, or your favorite Indian bread.

Expert Tips for the Perfect Palak Gosht

  • For a richer flavor, marinate the mutton in yogurt and some of the spices for at least 30 minutes before cooking.
  • Adjust the amount of green chilies according to your spice preference. If you prefer a milder curry, use fewer chilies.
  • Don't overcook the spinach; it should be tender but still retain some of its bright green color.
  • For a creamier texture, stir in a tablespoon or two of heavy cream or yogurt at the end of cooking.
