For the Spinach

For the Yogurt Mixture

  • 5 cup Yogurt plain, whole milk yogurt (also known as curd)
  • 1.5 tsp Salt or to taste
  • 1/2 tsp Sugar optional, to taste
  • 1/2 tsp Cumin Powder ground cumin (jeera)

Prepare the Spinach

  • Wash and finely chop the spinach. Heat 1 tablespoon of oil in a pan. Sauté the spinach for 2-3 minutes with a little salt and the chopped green chili. Set aside to cool.

Make the Yogurt Mixture

  • In a bowl, whisk together the yogurt, 1.5 teaspoons of salt, cumin powder, and sugar (if using) until smooth.

Combine and Adjust

  • Gently fold the cooled spinach into the yogurt mixture. Add a little water if you prefer a thinner consistency.

Make the Tempering

  • Heat the remaining 1 tablespoon of oil in a small pan. Add the asafoetida and mustard seeds. Once they begin to splutter, pour the tempering over the raita.

Serve and Enjoy
