Ingredients
For the Spinach
- 1 bunch Spinach approximately 3 cups finely chopped
- 1 Chili finely chopped, green
- 1 tbsp Vegetable Oil
- 1/2 tsp Salt or to taste
For the Yogurt Mixture
- 5 cup Yogurt plain, whole milk yogurt (also known as curd)
- 1.5 tsp Salt or to taste
- 1/2 tsp Sugar optional, to taste
- 1/2 tsp Cumin Powder ground cumin (jeera)
For the Tempering
- 1 tbsp Vegetable Oil
- 1 tsp Mustard Seeds (rai)
- 1 pinch Asafoetida (hing)
Instructions
Prepare the Spinach
- Wash and finely chop the spinach. Heat 1 tablespoon of oil in a pan. Sauté the spinach for 2-3 minutes with a little salt and the chopped green chili. Set aside to cool.
Make the Yogurt Mixture
- In a bowl, whisk together the yogurt, 1.5 teaspoons of salt, cumin powder, and sugar (if using) until smooth.
Combine and Adjust
- Gently fold the cooled spinach into the yogurt mixture. Add a little water if you prefer a thinner consistency.
Make the Tempering
- Heat the remaining 1 tablespoon of oil in a small pan. Add the asafoetida and mustard seeds. Once they begin to splutter, pour the tempering over the raita.
