Ingredients
Wet Ingredients
- 100 ml Oil
- 125 gm Sugar brown
- 250 ml Milk
- 100 ml Strong Coffee freshly brewed
- 1 tsp Vanilla Extract
Dry Ingredients
- 250 gm Whole Wheat Flour whole
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
Mix-ins
- 18 Dates pitted and chopped
- 1/2 cup Chocolate Chips optional
Instructions
- Preheat oven to 180°C (350°F). Grease and flour a baking tin. Preheating ensures the cake bakes evenly.
- In a large bowl, whisk together the oil, brown sugar, milk, coffee, and vanilla extract until the sugar dissolves.
- In a separate bowl, sift together the whole wheat flour, baking powder, baking soda, and salt. Sifting aerates the dry ingredients, resulting in a lighter cake.
- Gently fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix, as this can make the cake tough.
- Fold in the chopped dates and chocolate chips (if using).
- Pour the batter into the prepared baking tin and gently tap it on the counter to release any air bubbles.
- Bake for 30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the tin for 10 minutes before inverting it onto a wire rack to cool completely.
