  • 0.25 cup Walnuts chopped

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour a baking dish.
  • In a large bowl, whisk together the whole wheat flour, oat flour, baking powder, cinnamon, cloves, and ginger.
  • In a separate bowl, whisk the eggs until light and fluffy. This incorporates air for a lighter cake.
  • Add the honey, sugar, and oil to the egg mixture and whisk until well combined.
  • Gently fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.
  • Add the diced apples and chopped walnuts to the batter. Mix until evenly distributed.
  • Pour the batter into the prepared baking dish and sprinkle with additional chopped walnuts.
  • Bake for 40 minutes, or until a wooden skewer inserted into the center comes out clean.
