Ingredients
For the Finger Millet Roti
- ¾ cup Ragi Flour
- ¾ cup Water or as needed
- ⅛ tsp Salt
- 1 tsp Ghee for cooking roti and greasing, or sesame oil
For the Energy Balls
- ½ cup Peanuts
- ½ cup Sesame Seeds white or black
- ⅛ cup Desiccated Coconut
- ⅛ tsp Cardamom Powder
- ⅛ tsp Ginger Powder dry
- ¾ cup Jaggery plus 1 tbsp, powdered
- 1 tsp Ghee for greasing palms
Instructions
- Dry roast the peanuts until fragrant and lightly browned. Remove the skins and let them cool completely.
- In the same pan, dry roast the sesame seeds until they splutter and become fragrant. Set aside to cool.
- Dry roast the desiccated coconut briefly until fragrant. Combine it with the cardamom powder and ginger powder. Let the mixture cool.
- In a saucepan, heat the water with salt. Set aside.
- Sift the finger millet flour into a pan and dry roast it over medium heat until a pleasant aroma develops. This enhances the nutty flavor of the flour.
- Remove the roasted flour from the heat. Gradually add the hot salted water to the flour, mixing continuously to form a soft dough. Be careful not to add too much water at once.
- Divide the dough into three equal portions. Roll each portion into a smooth ball.
- Heat a flat skillet or tawa over medium heat. Lightly grease your hands with ghee or sesame oil. Place one dough ball on the hot tawa and gently flatten it into a thin roti using your fingers or a rolling pin.
- Cook the roti for a minute or two on each side, or until lightly golden brown. Repeat with the remaining dough balls. Let the rotis cool completely.
- Tear the cooled rotis into small pieces and place them in a mixer jar. Grind into a fine powder.
- Add the roasted peanuts to the mixer and pulse a few times until coarsely ground.
- Add the powdered jaggery to the mixer and pulse until well combined.
- Add the roasted sesame seeds and the coconut mixture to the mixer. Pulse until everything is evenly distributed.
- Transfer the mixture to a bowl. Knead gently until it comes together.
- Grease your palms with ghee. Roll small portions of the mixture into bite-sized balls.
