Ingredients
- 500 gm Ragi Flour
- 750 gm Sugar
- 200 gm Ghee
- 1/2 cup Cashews ghee roasted
Instructions
- Wash the ragi flour and soak it in water overnight. This helps soften the flour and makes it easier to grind.
- Grind the soaked ragi in a blender, adding a little water at a time until you achieve a smooth, milk-like consistency.
- Strain the ragi mixture through a fine-mesh sieve or cheesecloth to remove any coarse particles. Collect the strained ragi milk and set it aside for about an hour to allow the thicker portion to settle at the bottom.
- Carefully pour off the excess water from the top, leaving the settled ragi paste at the bottom.
- In a heavy-bottomed pan or pot, bring the extracted ragi milk to a boil over medium heat. Stir continuously to prevent sticking and burning.
- Continue stirring as the ragi milk thickens and reduces to a paste-like consistency. This cooking process helps to develop the flavors and create a smooth texture.
- Once the ragi paste has thickened, add the sugar and stir until it dissolves completely. Initially, the mixture may appear lumpy, but continue stirring until it smooths out.
- Gradually add the ghee, a tablespoon at a time, stirring constantly to incorporate it into the ragi mixture. The ghee adds richness and flavor to the halwa.
- Continue stirring until the halwa comes together and pulls away from the sides of the pan. This indicates that the halwa is cooked through and ready to be served.
- Stir in the ghee-roasted cashews. The cashews add a delightful crunch and complement the earthy flavor of the ragi.
- Serve the warm and fragrant Ragi Halwa immediately and enjoy!
Recipe Notes
Good To Know
- For added texture and nutrition, stir in a tablespoon of finely shredded coconut or a handful of chopped dried fruits like raisins or dates along with the cashews.
- If you prefer a vegan version, substitute desi ghee with cold-pressed coconut oil; this will add a subtle coconut aroma that pairs well with the earthy flavor of ragi.
- To enhance the aroma and richness, dry-roast the ragi flour on low heat for a few minutes before adding the ghee, ensuring it turns slightly nutty without burning.
- For a festive presentation, pour the cooked halwa into a greased tray, smooth the top, and let it cool before cutting into squares or diamonds for easy serving at gatherings.
Expert Tips
- Adjust the sweetness according to your preference by adding more or less sugar than the recipe suggests. Taste and adjust as needed.
- For a creamier texture, you can add a splash of milk or cream towards the end of the cooking process. Stir well to combine.
- Don't overcook the halwa, as it can become dry. Cook just until it thickens and starts to leave the sides of the pan.
Storage Instructions
- Store leftover halwa in an airtight container in the refrigerator for up to 3-4 days. Gently reheat in a microwave or on the stovetop before serving.
