Ingredients
Meatballs
- 1 cup Soy chunks
- 1 Onion finely chopped, medium
- 2 Tbsp Carrot grated
- 2 Chili Pepper finely chopped, green
- 1/2 inch Ginger finely chopped
- 1 Tbsp Cilantro finely chopped, fresh
- 1 Tbsp Gram Flour gram flour
- 1 Tbsp Rice Flour
- 1 Tbsp Corn Flour
- 1 tsp Chili Powder red
- 1 tsp Garam Masala
- 1 1/2 tsp Salt or to taste
Other Ingredients
- 25 Farfalle Pasta
- Oil for deep frying
- Water for boiling
- Pasta Sauce for serving
Instructions
- Cook the farfalle pasta according to package directions until al dente. Drain and toss with a little oil to prevent sticking. Set aside.
- In a saucepan, boil water and add the soya chunks. Cook for 5 minutes to soften. Remove from heat and let them rest for 15 minutes. This allows the soya chunks to fully hydrate and lose any raw smell. Drain the water and rinse the soya chunks under running water.
- Squeeze out excess water from the soya chunks. In a food processor or grinder, combine the soya chunks, green chilies, and ginger. Pulse until a slightly coarse paste forms. Avoid over-processing, as a little texture is desirable.
- Transfer the soya mixture to a mixing bowl. Add the besan, rice flour, corn flour, chopped onion, grated carrot, coriander leaves, garam masala, red chili powder, and salt. Mix thoroughly until a smooth dough forms.
- Shape the dough into small meatballs, approximately 25 in total.
- Heat oil in a deep pan over medium heat. Deep fry the meatballs in batches until they are golden brown and cooked through. This should take about 5-7 minutes. Remove the meatballs and place them on a paper towel-lined plate to drain excess oil.
- Thread a cooked farfalle pasta and a veggie meatball onto each toothpick.
- Serve the canapés warm with your favorite pasta sauce.

- Completely squeeze out water from the soya chunks, otherwise the mixture will not hold together to form smooth balls.
