  • Wash the basmati rice thoroughly under cold water until the water runs clear. This removes excess starch and helps achieve fluffy, separated grains. Soak the rice in warm water for 30 minutes to hydrate the grains, ensuring even cooking.

  • In a large bowl, combine the ground chicken, 2 finely chopped onions, 2 teaspoons of garlic paste, 1 teaspoon of ginger paste, 2 teaspoons of garam masala, tomato paste, and chopped cilantro. Mix well. Season with salt, pepper, and a pinch of nutmeg or mace.

  • Divide the chicken mixture into equal portions. Shape each portion into a ball, placing a cheese cube in the center. Gently roll the balls to ensure the cheese is enclosed.
  • Heat the vegetable oil in a large pan over medium heat. Fry the thinly sliced onion until golden brown and crispy. This creates a flavorful garnish known as barista. Remove the fried onions and set aside on a paper towel-lined plate to drain excess oil.
  • In the same pan, add the remaining chopped onion and sauté until lightly browned. Add the ginger and garlic pastes and fry for a few minutes until fragrant. Add the ground coriander, cumin seeds, chili powder, garam masala, and turmeric powder. Fry for 2–3 minutes, allowing the spices to bloom and release their flavors.
  • Add the sliced tomatoes to the pan and mix well. Cook until the tomatoes soften and the gravy starts to release oil, indicating the spices are well-cooked.
  • Pour 1 cup of warm water into the gravy and season with salt to taste. Gently add the chicken koftas to the gravy. Avoid stirring for the first 5 minutes to prevent them from breaking.
  • After 5 minutes, gently stir the koftas, ensuring they are coated in the gravy. Cook uncovered until the koftas are cooked through and the gravy has reduced to about 1 to 1 1/2 cups.
  • In a small bowl, soak the saffron strands in warm milk for a few minutes. This extracts the color and flavor from the saffron, adding a beautiful golden hue and a delicate aroma to the biryani.
  • Grease a large, deep oven-safe dish or Dutch oven. Layer half of the cooked rice in the bottom. Arrange the chicken koftas over the rice, followed by the remaining rice. Sprinkle fresh cilantro between each layer.
  • Pour the saffron-infused milk evenly over the top layer of rice. Sprinkle half of the fried onions (barista) over the rice.
  • Cover the dish tightly with a lid or aluminum foil to trap the steam and ensure even cooking.
  • Bake in a preheated oven at 350°F (175°C) or simmer on low heat on the stovetop for about 30 minutes. This allows the flavors to meld and the rice to absorb the remaining moisture.
  • Garnish with the remaining fried onions and fresh cilantro. Serve hot with boondi raita or a vegetable raita of your choice.
