Instructions

Preparation

  • Thoroughly rinse the water spinach to remove any grit. Allow it to drain completely in a colander for at least 30 minutes, or use a salad spinner for faster results.

Stir-frying the Water Spinach

  • Heat the vegetable oil in a wok or large skillet over medium heat. Add the minced garlic and chopped green chilies and sauté for about 1 minute, or until fragrant, being careful not to burn the garlic.
  • Add the drained water spinach to the wok. Stir-fry over high heat for 2-3 minutes, or until the spinach is wilted but still retains some crispness.
  • Season with salt and stir to combine. Continue to cook for another minute, allowing the flavors to meld.
  • Remove from heat and serve immediately. Enjoy!

Expert Tips for the Perfect Water Spinach Stir-Fry

  • For a deeper flavor, consider adding a teaspoon of soy sauce or fish sauce at the end.
  • Don't overcook the water spinach, as it can become mushy. Aim for a tender-crisp texture.
  • Feel free to customize the spice level by adding more or fewer green chilies.
  • Garnish with toasted sesame seeds or a squeeze of lime juice for extra flavor and visual appeal.
