  • In a pressure cooker, combine the moringa leaves, soaked moong dal, and a pinch of salt.

  • Pressure cook for 3 whistles until the dal and leaves are tender.

  • In a blender, combine the coconut, green chilies, and red chilies. Blend into a smooth paste.
  • Heat the oil in a pan. Add the coriander seeds. Once they splutter, add the asafoetida.
  • Add the chopped onions and sauté until translucent. This allows the onions to sweeten and develop flavor.

  • Add the chopped tomatoes and cook until they soften.
