Ingredients
For the Moringa Kootu
- 1 cup Moringa Leaves also known as drumstick leaves
- 1/2 cup Mung Bean
- 1/2 cup Coconut grated
- 1 tsp Cumin seeds
- 1-2 Chili Pepper dry, red
- 1 Onion finely chopped, small
- 1 Tomato finely chopped
- 1/2 tsp Mustard Seeds
- 1 tsp Gram black, split
- 2 1/2 tsp Vegetable Oil
- Salt to taste
For the Pretzel Bread Dough
For the Boiling Solution
- 1/2 cup Water
- 3/4 cup Baking Soda
For Brushing
- 1/4 cup Milk
For Topping
- 1/4 cup Poppy Seeds
Instructions
Prepare the Moringa Kootu
- Pressure cook the moong dal for 2 whistles.
- Grind the coconut, cumin seeds, and dry red chili into a smooth paste.
- Heat oil in a pan. Add mustard seeds and urad dal; cook until they splutter.
- Add chopped onions and sauté until translucent.
- Add chopped tomatoes and moringa leaves with 1-2 tablespoons of water. Cook covered for 8-10 minutes.
- Add the cooked dal, coconut paste, and salt. Add enough water to reach desired consistency. Simmer for 4-5 minutes.
Make the Pretzel Bread Dough
- In a large bowl, combine warm milk, brown sugar, and yeast. Let stand until frothy (about 5-10 minutes).
- Add melted butter, salt, semolina flour, and whole wheat flour to the yeast mixture. Mix well.
- Cover the bowl and let the dough rest for 10 minutes.
- Knead the dough on a lightly floured surface until smooth and elastic (8-10 minutes).
- Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
Prepare the Pretzel Bread
- Preheat oven to 400°F (200°C).
- In a saucepan, bring water and baking soda to a boil.
- Punch down the dough and divide it into 8 equal pieces. Shape each piece into a smooth ball.
- Boil each bread ball in the baking soda solution for 2 minutes, flipping halfway through.
- Remove the bread balls with a slotted spoon and place them on a greased baking sheet.
- Brush the bread balls with milk and sprinkle generously with poppy seeds.
- Bake for 15 minutes at 400°F (200°C), then reduce the oven temperature to 350°F (175°C) and bake for an additional 10-12 minutes, or until golden brown.
- Brush with melted butter immediately after removing from the oven.
- Once cooled slightly, carefully cut a circle on top of each bread bowl and remove the top to create a bowl shape.
Serve
- Serve the warm moringa kootu in the crusty pretzel bread bowls.

- For a richer flavor, toast the cumin seeds and dry red chili before grinding them into a paste.
- If you don't have semolina flour, you can substitute with all-purpose flour, but the texture might be slightly different.
