Ingredients
For the Moong Dal Halwa
- 1 cup Mung Bean soaked and coarsely ground, yellow
- 1 cup Ghee
- 1 cup Milk
- ¾ cup Mawa or mawa
- 1 cup Sugar
- 1½ pinch Saffron Strands
- 1 tsp Cardamom Powder
- 1½ Tbsp Nuts almonds, chopped, mixed, walnuts, watermelon seeds
For the Canapés
- 4 slices Bread cut into circles
- 3 Tbsp Sweetened Milk condensed
- ½ cup Ghee for frying
Instructions
- Soak the moong dal in water for 3-4 hours. Drain and coarsely grind without adding any water.
- In a large pan or kadai, heat 1 cup of ghee over medium heat until melted.
- Add the ground moong dal to the melted ghee. Sauté until golden brown and fragrant, about 15-20 minutes. The ghee will begin to separate from the dal.
- Meanwhile, in a separate saucepan, heat the milk until warm.
- Carefully pour the warm milk into the pan with the moong dal. Stir well to combine.
- Continue to cook, stirring occasionally, until the milk has been absorbed and the halwa thickens.
- Add the khoya and mix well. This adds richness and creaminess to the halwa.
- Cook for another minute, then stir in the sugar, saffron strands, and cardamom powder.
- Continue cooking and stirring until the sugar dissolves and the ghee begins to separate from the halwa again. This indicates the halwa is ready.
- Remove from heat and stir in the chopped nuts.
- Using a cookie cutter or a knife, cut the bread slices into circles.
- Heat the remaining ½ cup of ghee in a separate pan. Fry the bread circles until golden brown and crispy.
- Dip each fried bread circle into the sweetened condensed milk.
- Place the condensed milk-dipped bread circles on a serving platter. Top each with a spoonful of the prepared moong dal halwa. Garnish with additional chopped nuts, if desired.
- Serve the Moong Dal Halwa Canapés warm or cold.
Recipe Notes
Good To Know
- For the canapés base, consider using mini tart shells, phyllo cups, or even crisped puris for an added crunch and an interesting fusion of textures.
- If you want to prepare the halwa in advance, cook it a day ahead and refrigerate; gently reheat with a splash of milk before assembling the canapés to restore its creamy consistency.
- Garnish each canapé with a tiny edible silver leaf (varq), a sliver of pistachio, or a dried rose petal for an elegant, festive touch that enhances visual appeal.
- To make a vegan version, use coconut oil in place of ghee and almond milk instead of dairy milk; substitute khoya with finely ground cashews or almond meal for a similar richness.
Expert Tips
- For a smoother halwa, blend the cooked moong dal with an immersion blender before continuing with the recipe.
- Adjust the sweetness according to your preference by adding more or less sugar.
- Don't overcook the halwa, as it will thicken further upon cooling.
Storage Instructions
- Store leftover halwa in an airtight container in the refrigerator for up to 3 days. Gently reheat before serving.
