Ingredients
Baklava Filling
For the Muffins
- 210 gm All-Purpose Flour
- 2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 100 gm Sugar granulated
- 1 Large Egg
- 45 gm Butter melted, unsalted
- 250 ml Buttermilk
Honey Drizzle
- 125 ml Honey warmed
Instructions
- Preheat oven to 180°C (350°F). Preheating ensures the muffins bake evenly.
- Line a muffin tin with paper liners. This prevents the muffins from sticking and makes them easy to remove.
- In a medium bowl, combine the chopped mixed nuts, brown sugar, and ground cinnamon.
- Pour the melted butter over the nut mixture and stir until well combined. Set aside.
- In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and granulated sugar.
- In a separate bowl, whisk together the egg, melted butter, and buttermilk.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix, as this can result in tough muffins.
- Fill each muffin liner about ⅓ full with batter. Sprinkle a generous amount of the baklava filling over the batter.
- Top with another spoonful of batter and another sprinkle of the baklava filling. Repeat until all the batter and filling are used.
- Bake for 15-17 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the muffins from the oven and immediately drizzle with warm honey. The heat of the muffins helps the honey absorb and creates a beautiful glaze.
- Let the muffins cool slightly before serving. Enjoy!
Recipe Notes
Good To Know
- For an authentic baklava aroma, brush the warm muffins with a honey-lemon syrup right after baking, allowing them to soak up extra moisture and flavor.
- If you want added crunch, sprinkle a thin layer of chopped nuts and a pinch of cinnamon-sugar on top of the batter before baking.
- Use a mix of pistachios, walnuts, and almonds for the filling to mimic traditional baklava, and lightly toast the nuts beforehand to deepen their flavor.
Expert Tips
- Don't overmix the batter. Overmixing can lead to tough muffins.
- Fill the muffin liners almost to the top to ensure tall, bakery-style muffins.
- For a richer flavor, use browned butter in the batter.
Storage Instructions
- These muffins freeze well. Cool completely, then wrap individually and freeze for up to 2 months. Thaw at room temperature, and reheat briefly for a fresh-baked feel.
