Created in collaboration with Place of Origin and Plattershare for their Belly Nirvana Campaign, this Mocha Banana Cake is a delicious and healthy twist on a classic. Using special mocha chocolate powder, this recipe (my second campaign post!) combines rich coffee and chocolate flavors with the natural sweetness of ripe bananas for a truly satisfying treat.
Made with wholesome ingredients like whole wheat flour, honey, and milk, this cake is wonderfully moist and soft. It's entirely free of refined sugar, making it a guilt-free indulgence perfect for breakfast, dessert, or an afternoon snack.

Prepare the Dry Ingredients

  • Sift together the whole wheat flour, baking soda, and mocha chocolate powder.

Combine Wet Ingredients

  • In a separate bowl, mash the ripe bananas. Add the milk, honey, oil, and vanilla extract (optional). Beat well until thoroughly combined.

Combine Wet and Dry

  • Gradually add the dry ingredients to the wet ingredients, gently folding until just combined. Be careful not to overmix.

Add Almonds

  • Fold in the sliced almonds.

Prepare the Baking Dish

  • Grease an 8-inch square baking dish with ghee (clarified butter) and dust lightly with flour.

Microwave Baking

  • Pour the batter into the prepared baking dish. Microwave on high for 7-8 minutes, or until a toothpick inserted into the center comes out clean. Microwave times may vary; keep an eye on it.

Cooling and Serving

  • Let the cake cool completely in the dish before cutting and serving. Enjoy!

Expert Tips for the Perfect Mocha Banana Cake

  • For extra moisture, add a tablespoon of applesauce to the batter.
  • If your bananas aren't very ripe, add a pinch of baking powder along with the baking soda for better leavening.
  • To check for doneness, gently press the center of the cake; it should spring back slightly.
  • Allow the cake to cool completely before cutting to prevent it from crumbling. A cooling rack is ideal.
