Ingredients
For Greasing & Sprinkling
- 1.5 Tbsp Butter at room temperature
- 1 Tbsp Coconut Sugar for sprinkling
Dry Ingredients
- 0.75 cup Whole Wheat Flour whole
- 0.125 cup Almond Flour
- 2.5 Tbsp Vanilla Custard Powder
- 0.75 cup Coconut Sugar
- 1 pinch Salt
Wet Ingredients
- 0.5 cup Milk
- 0.5 cup Heavy Cream
- 2 tsp Chia Seeds ground, white
- 3.5 Tbsp Water
- 1 tsp Vanilla Extract
Fruits
- 2 Bananas medium, sliced
- 0.25 cup Blueberries dried
Instructions
- Liberally grease a baking tray with butter. This ensures the clafoutis won't stick and will release easily.
- Sprinkle coconut sugar evenly over the buttered tray. This creates a delightful caramelized crust.
- In a small bowl, combine the ground chia seeds with water. Set aside to allow the chia seeds to absorb the water and form a gel-like consistency. This acts as a binding agent in the eggless batter.
- In a mixing bowl, whisk together the whole wheat flour, almond flour, vanilla custard powder, coconut sugar, and salt.
- Add the chia seed mixture, milk, heavy cream, and vanilla extract to the dry ingredients.
- Gently mix the wet and dry ingredients until just combined. Be careful not to overmix, as this can result in a tough clafoutis. The batter should have a smooth, pancake-like consistency.
- Preheat the oven to 350°F (175°C).
- Pour about 1/4 of the batter into the prepared baking tray. Bake for 10 minutes. This initial baking helps set the top layer, making it easier to arrange the fruit.
- Remove the tray from the oven and arrange the sliced bananas and dried blueberries over the partially baked batter.
- Pour the remaining batter over the fruit, ensuring they are evenly distributed. Bake for another 40 minutes, or until the clafoutis is puffed up, set like a pudding, and golden brown around the edges.
- Let the clafoutis cool slightly before slicing and serving. Enjoy warm, optionally topped with a scoop of your favorite ice cream.
