Ingredients
For the Methi Nu Lotiyu
- 250 gm Fenugreek Leaves finely chopped (methi), fresh
- 1/4 cup Water
- 1 cup Gram Flour besan
For Seasoning
- 4 tbsp Oil vegetable or canola oil
- 1 tsp Cumin Seeds
- 2 tsp Garlic Chutney store-bought or homemade
- 2 tsp Chili Powder adjust to taste, red
- 1/2 tsp Turmeric Powder haldi
- 1 pinch Asafoetida hing
- 1.5 tsp Salt or to taste
Instructions
Preparing the Spice Base
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add asafoetida, turmeric powder, and salt. Stir well and cook for 10 minutes, stirring occasionally.
Combining Ingredients
- Add garlic chutney and red chili powder. Stir well and cook for 1 minute.
- Stir in water and chickpea flour. Cook for 2-3 minutes, or until the mixture thickens slightly, stirring constantly to prevent lumps.
Adding Fenugreek Leaves
- Stir in the chopped fenugreek leaves. Cook for another 2-3 minutes, until the leaves are wilted and the mixture is well combined.
