Ingredients
 

Mutton and Spices

Aromatics and Vegetables

  • 2 bunch Fenugreek Leaves about 1 cup packed, fresh
  • 6 cloves Garlic finely chopped
  • 2-5 Chili adjust to your spice preference, finely chopped, green

Cooking Oil

  • 4 tbsp Oil vegetable or ghee (clarified butter)
  • 2 cups Water for pressure cooking

Instructions
 

Prepare the Mutton

  • Pressure cook the minced mutton with salt, red chili powder, turmeric powder, and 2 cups of water for 3 whistles. Let the pressure release naturally.

Sauté Aromatics

  • Heat oil in a wok or pan over medium heat. Add the finely chopped garlic and cook for about 30 seconds, or until golden brown.

Add Chilies and Mutton

  • Add the green chilies and cook for 15 seconds on low heat. Add the cooked mutton and sauté for a minute on low heat.

Finish the Dish

  • Add the fenugreek leaves and mix well. Cook for 2-3 minutes on high heat. Once the fenugreek leaves are slightly wilted, add more salt to taste if needed and mix well. Cover and cook until heated through and the flavors have melded.
