Instructions

Prepare the Paneer

  • Mash the paneer thoroughly with your hands until it becomes smooth and creamy.

Cook the Mixture

  • In a non-stick kadai (wok) or heavy-bottomed saucepan, combine the mashed paneer and sweetened condensed milk. Mix well.
  • Cook over low heat, stirring continuously, until the mixture thickens and starts to pull away from the sides of the pan. This will take approximately 10-15 minutes.
  • Remove from heat and transfer the mixture to a plate to cool.

Add Flavorings and Cool

  • Once the mixture is slightly cooled, stir in the kewra essence and yellow food coloring. Mix until evenly incorporated.
  • Allow the mixture to cool completely. This is crucial for shaping the ladoos.

Shape and Garnish the Ladoos

  • Once the mixture is completely cool, take a small portion (about 1-1.5 tablespoons) and roll it into a ball to form a ladoo.
  • Sprinkle with cardamom powder and chopped pistachios (if using).
  • Repeat with the remaining mixture to form all the ladoos.

Serve and Enjoy

  • Serve your delicious Malai Ladoo and enjoy!

Recipe Notes

Expert Tips for Perfect Malai Ladoo

  • For extra smooth paneer, you can briefly blend it in a food processor before mashing by hand.
  • Adjust the amount of kewra essence and food coloring to your preference. Start with less and add more gradually.
  • If the mixture becomes too thick while cooking, add a teaspoon of milk at a time to adjust the consistency.
  • For a richer flavor, you can add a pinch of saffron strands along with the kewra essence.
