  • Bring the mixture to a boil over medium heat. Stir occasionally to ensure the sugar dissolves completely.
  • Reduce the heat to low and simmer for about 5-7 minutes, or until the syrup slightly thickens. This creates the perfect sweetness and texture for the gulab jamun.

Making the Jamuns

  • In a mixing bowl, whisk together the milk powder, all-purpose flour, and baking soda.
  • Add the ghee and mix well until the mixture resembles coarse crumbs.
  • Gradually add the yogurt, one tablespoon at a time, mixing gently until a soft, pliable dough forms. Avoid overmixing, as this can make the gulab jamun tough.
  • Divide the dough into small, equal portions. Roll each portion between your palms to form smooth, round balls. Ensure there are no cracks, as this will prevent them from bursting during frying.
  • Heat the oil in a deep frying pan or kadai over medium heat. To test if the oil is ready, drop a small piece of dough into the oil – it should sizzle gently and rise to the surface.
  • Reduce the heat to low and gently slide the gulab jamun balls into the hot oil. Avoid overcrowding the pan. Fry in batches if necessary.
  • Fry the gulab jamun, stirring occasionally, until they turn a rich, golden brown color. This slow frying ensures they cook evenly throughout.
  • Using a slotted spoon, carefully remove the fried gulab jamun from the oil and transfer them directly to the warm cardamom syrup.
  • Allow the gulab jamun to soak in the syrup for at least 1-2 hours. This allows them to absorb the syrup and become soft and decadent.
